Project description
The Pago de Carraovejas winery and vineyard is located in Peñafiel (Valladolid) at the heart of the Spanish wine region of Ribera del Duero.
It currently holds 160 hectares of production area with three grape varieties – Tempranillo, Cabernet Sauvignon and Merlot – and uses different cultivation systems adapted to each small plot.
The complete facilities come to more than 26,000 m² , with views over the Botijas valley and Peñafiel Castle.
Importance of temperature control
One of the key elements is controlling the temperature in the tanks in order to achieve a wine of the highest quality.
The chilled water production is realised with air-cooled refrigeration units equipped with high-efficiency screw compressors, which allow for very precise adjustment to the required cooling capacity. In addition, they offer a broad operating range in outdoor temperatures from -20 °C up to 55 °C and with chilled water production up to -15 °C.
The units have inspection schedules and personalised protocols to ensure optimum operation.
Thanks to these services, it was possible to minimise operating costs and maximise the service life of the installation.
The winery is designed with the aim of fully respecting the natural gravity-fed fermentation process and the original characteristics of the raw materials. It has implemented an innovative fermentation system equipped with the latest technology to achieve more efficient maceration.
