When you walk into the produce section of your local supermarket, you are often met by a display of bananas. If they’ve been properly cared for, they should be near perfect ripeness, so that you can take them home and enjoy them over the next several days. While readily available in most parts of the world, bananas are typically grown in regions that are thousands of miles and weeks away from your market. From the time they leave the tree, bananas are at risk of spoilage if not kept at temperatures between 56°F and 58°F (13.3°C-14.4°C) and at relative humidities between 90-95 percent. Any deviation from these temperatures and humidities can seriously jeopardize the quality of an entire shipment. If bananas get too warm, they will ripen too fast; if too cold, they will develop dark spots or not ripen at all.
